Spinach Salad Recipe
Last week Spawn and I bought a 2.5 lb bag of spinach from Farmers Market, along with some ingredients to make spinach salad. He didn't believe we'd actually eat all of it within the spoilage time.
Of course, I have a method to my madness. With this recipe, you too can consume a mass load of spinach in minimal time!
Ingredients per serving:
2 oz spinach (acquired @ 2.19/lb = $0.27)
1 tbsp dehydrated cranberries (1/4 oz, acquired @ 5.29/lb = $0.08)
1 tbsp sliced almonds, toasted to a golden brown (1/4 oz, acquired @ 3.50/lb = $0.05)
1/2 tbsp bleu cheese crumbles (1/4 oz, acquired @ 8.99/lb = $0.14)
Behold, a 54 cent salad, with light balsamic vinaigrette dressing, clocks in at 125 calories per serving. You can make 20 servings from a 2.5 lb bag of spinach, (10 per week, or 20 all at once). Refrigerate, and enjoy!
